Good and -more importantly- easy

Apricot Chicken

4 chicken breasts
6 oz. Russian salad dressing (looks like French dressing)
1/2 package Lipton onion soup
1/2 cup apricot jam

Mix all ingredients. Bake at 350* for 1 hour. Serve over rice.

Weekend Sum

This past weekend we made a quick trip down to St. George so Robert could run in a 10K...and to enjoy the weather and get away from our long to-do list. Usually I rely on pictures to tell the story but we didn't take our camera so here's the weekend in review:

Scariest moment: Mackenzie running across the pool cover (We we're in the hot tub and the nearby pool had the cover on. The obedient child that we have through her ball onto the cover and then amidst our "NO NO NO NO's" ran out to get it. Robert and I both thought she was going in for sure but Robert jumped up and ran after her to save her life and she just kept running- right across the whole pool.)
Most rewarding moment: Robert excelling in his 10K race (Way to go!)
Most delicious moment: Microwavable fudge brownie (You just add 1 tablespoon of water and microwave it for 45 seconds. It's like homemade but in a single serving so then I can't eat the whole pan) 
Best buy: Bumbo seat (Brookie loves to be upright and this little thing is perfect. She got to use it whenever Mackenzie decided it was her turn.)
Worst thing: All 4 of the Smiths in bed together because the 2 kids wouldn't sleep (Gets crowded when Kenzie sleeps horizontal)
Movie recommendation: Dan in Real Life (Steve Carell in a great role about a single dad finding romance. Currently in your nearest Red Box )

6 Random Facts

I've been tagged by 2 of my beautiful friends so I decided to pick the easier one and share some random facts about me.

1. I'm obsessed with the weather. I hate to go to bed at night without knowing what the weather is supposed to be the next day. Good thing for weather.com for those nights when I miss the news.
2. How much sleep do we get at our house? It's a simple equation really...Mackenzie + Brooklyn= Not Enough
3. I love cereal. I would be happy living on cereal and chocolate.
4. I've lived in Fallon, Provo, Oahu, Everett, Des Moines, Sioux Falls, Murray, Bluffdale, and soon I can add Taylorsville to the list. I hope it is the last addition for many many many years. After this move I am getting rid of all my cardboard boxes! We bought a house and should be moving in as soon as we get new paint and new carpet. It is a beautiful house in a great neighborhood and a convenient location. WOOHOO! Stay tuned for pictures :)
5. The other day Mackenzie was cracking up saying "Izzy licked my tongue." Absolutely disgusting I know but it sounded so funny the way she said it. She also said "Brookie's looking at my treat" and "Izzy watching me eat my muffin."
6. I am happy that tonight is daylight savings time.

Izzy


This is Mackenzie and her new best friend Izzy. Am I crazy? Yes. I figured I'd have to eventually give in and get a dog with the husband and daughter that I have. We found her on ksl.com and couldn't pass her up. She's a 6 month old lab/heeler mix. So far she's been a good dog and patient with Kenzie. Aren't they cute together?
